Mycotoxins are toxic secondary metabolites produced by over 100 species of harmful fungi, including those from the genera Fusarium, Aspergillus, and Penicillium. They are widely present in mold-contaminated grains, fruits, nuts, as well as their products and by-products, posing a severe threat to human and animal health and causing enormous economic losses to the global food, agriculture, and animal husbandry industries. Mycotoxins mainly include more than 300 types such as aflatoxins, vomitoxins (deoxynivalenol), patulin, zearalenone, and ochratoxins.
